Guide to Your Buttermilk Sunday
Wake up on Saturday and go out to brunch. Head to the market and buy ingredients for Buttermilk Pancakes, Buttermilk Biscuits, and Buttermilk Fried Chicken.
Here they are! Cross off the ones you already have in your kitchen:
- Flour
- Sugar
- Pack of Butter
- Baking Soda
- Baking Powder
- Eggs
- Kosher Salt
- Maple Syrup
- Lemon, Thyme, Rosemary, Brown Sugar or Honey or Maple Syrup, Peppercorns, Bay Leaf, head of garlic (optional additions to your brine)
- 3 chicken breasts
- 1 Quart of Buttermilk
- Canola Oil
- Garlic Powder
- Cayenne Pepper
- Paprika
- Pepper
I learned a few things from this round of fried chicken and biscuits:
- if you don’t have buttermilk, go buy some
- if you are terrible at breaking down a chicken (like me) try this recipe with just breasts
- having about two inches of oil is really important
- maintaining a constant temperature is also really important (every time you add chicken to the oil, the temperature will drop!)
- and the most important: BRINE, ALWAYS BRINE!
Saturday Evening around 8PM prepare your brine. Cool it and put the breasts in around 9PM.
9AM Sunday morning, take the breasts out of the brine (and dump the brine) rinse them, pat them dry and store in tupperware in the refrigerator.
Make buttermilk pancakes for breakfast! Add Bacon or sausage and mimosas!
Around 5:30PM bring the breasts to room temp.
Prepare the biscuit dough around 6PM. Let the rounds sit on counter while you preheat the oven and heat the oil and flour the chicken bits.
Around 6:30PM when you are finished, stick the biscuits in the oven. Fry the chicken.
7PM enjoy the fruits of your labor, perhaps with some cauliflower pickles!

11PM get into bed and consider waking up early to go to the gym tomorrow. Sleep really well.
