GQ’s Heavenly Pancakes

I always tear out GQ’s amazing recipes and this one hit the spot!

serves 2

  • 1 cup flour
  • 2 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 cup buttermilk
  • 1/4 milk
  • 1 egg
  • 2 T butter plus a little bit more for frying
  • 1/4 tsp vanilla

In one bowl combine dry ingredients.  In another bowl combine wet.  Slowly stir the dry ingredients into the wet with a fork.  Heat 1/2 T butter in a skillet and wait until it bubbles.  Pour pancake batter in 1/4 cup at a time (about three fit in my pan).  Fry for about 4 minutes until bubbles are coming through the batter. Flip and fry for another 2 minutes or so until browned.  Add butter as needed. Serve with maple syrup. Cry from Sunday morning happiness!
