Ad Hoc: Buttermilk Biscuits

Buttermilk Biscuits 

p. 276, makes about six

  • 2 cups flour (the recipe calls for half of this to be cake flour, for a finer crumb, but I couldn’t tell the difference!)
  • 1 1/2 tsp Kosher salt
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 stick butter, chilled, cut into cubes
  • 3/4 cup buttermilk + some for brushing

Oven 425. Line baking sheet with parchment (I used wax, it was fine).  

in a food processor, combine flour, salt, baking powder, and baking soda.  Give it a whirl.  Add the butter and process until the ingredients combine.  

Dump the stuff from the processor into a large bowl and create a well in the middle.  Pour buttermilk into the well.  Gently combine with a spoon until it just begins to come together (no dough ball here!)  

Flour a surface.  Dump the dough out onto it and press into a rectangle about 3/4 in high.  Use a glass or if you are fancy, a dough cutter to cut rounds.  Do your best to not overwork the dough. Place the rounds on the sheet, brush with more buttermilk.  Bake for 15-18 minutes until they turn brown!
