baguette-ish recipe
prepare dough a day in advance!

- 1 packet dry active yeast
- 1 tsp sugar
- 1 1/2 cup warm water
- about 4 cups flour
- 2 1/2 tsp salt
Put water in a large bowl and sprinkle sugar and yeast over. Let it stew for about 5 minutes or until it starts bubbling. Mix in 2 cups flour & salt with a wooden spoon. Continue mixing in 2 more cups using hands as the dough comes together. Flour a board and hands and knead the dough for about 8 minutes until stiff. Add in flour to keep the dough from sticking.
Clean bowl and oil. Let dough rest covered with plastic for about an hour, punch it down. Cover with plastic and let it rise overnight in the fridge. The next day, punch it down form loafs however small or big you feel like. Put the loaves on wax paper on a bake sheet and let rise for a while until they get bigger.
oven 400. make diagonal slashes in the loaves and brush with cold water. bake about 25-30 minutes until golden.
